Ingredients and preparation

  • 250 g queso fresco (unripened cheese)
  • 300 ml of single cream
  • 1 pineapple
  • 50 g sugar
  • Lemon
  • Brown sugar
  1. Cut the pineapple into sticks about 4 cm long, dip in the brown sugar and griddle.
  2. Put the cream, cheese, sugar and a little lemon in a mixing bowl. Blend everything and set aside.

Finishing and presentation

  1. Serve the caramelized pineapple with the queso fresco mousse.
