Ingredients and preparation

For the honey and mustard vinaigrette:

• 60g of extra virgin olive oil
• 20g of 25 year old sherry vinegar
• 3g of fine salt
• 15g of honey
• 10g of wholegrain mustard

  1. Dissolve the salt, honey and mustard in the vinegar and stir the mixture together with the oil using a whisk.
  2. Save in a bowl and set aside.

To season the salad:

• 400g of cherry tomato
• 100g of diced fresh cheese
• 100g of drained canned tuna
• 50g of honey and mustard vinaigrette
• 3g of fine salt
• 8g of chopped fresh basil

  1. Put the cherry tomatoes, diced fresh cheese and canned tuna in a bowl.
  2. Salt to taste.
  3. Season with the honey and mustard vinaigrette.

Others:

• Washed raw cauliflower
• Microplane grater
• Chervil leaves

Finish and presentation

  1. Serve the salad onto each plate and finish by grating the raw cauliflower.
  2. Decorate with chervil leaves.
