Quinoa salad with berries

Daniel del Toro, assisted by his daughter Claudia, teaches us how to cook a quinoa salad, to which he adds a special touch: berries. Ingredients and preparation

  • 250 g quinoa
  • 100 g soft fruits
  • 1 avocado
  • 10 cherry tomatoes
  • 10 Manzanilla olives
  • Frigate tuna in oil
  • 1 red onion
  • 1 lemon
  • Extra virgin olive oil
  • Salt
  1. Cook the quinoa and set aside.
  2. Chop the berries, avocado, cherry tomatoes, olives and mix with the quinoa. Add the red onion cut into julienne strips.
  3. Prepare a vinaigrette with lemon juice, extra virgin olive oil and salt.
  4. Add and mix together.

Finishing and presentation

  1. Garnish with chopped red onion and the frigate tuna.
